Pumpkin Cake Cream Cheese Frosting. In a large bowl, whisk together the eggs, sugar, oil and pumpkin. Make the frosting: In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy.
If you prefer a thicker frosting you can additionally add an extra ¼ cup of sugar. Add in the eggs and stir till smooth. Add flour, baking powder, baking soda and salt and stir just until the dry ingredients are combined.
In another bowl, whisk together flour, baking powder, baking soda, salt and spices; gradually beat into pumpkin.
Add vanilla, salt and powdered sugar, blending until smooth and fluffy.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, ground cinnamon, and salt. In a large bowl, whisk together your sugar and oil and pumpkin until well combined. In a large bowl, add eggs, sugar, pumpkin, vegetable oil and vanilla extract.
