Raspberry Chocolate Cheese Cake. In a large bowl, beat cream cheese and sugar until smooth. To make the crust: Combine graham cracker crumbs, sugar, and melted butter in a mixing bowl and combine together.
Add in the nut meal, natural sweetener, egg and extract (if using). PLACE cookies into bowl of a food processor. Repeat until the ganache looks like a smooth chocolate syrup.
Press evenly into bottom of prepared pan.
In a large bowl, beat cream cheese and sugar until smooth.
Add chocolate and stir until chocolate is melted. PULSE cookies until crushed into fine crumbs. Pour the ganache on top of the room temperature cheesecake.
