Recipe For Fruit Cocktail Cake. Top a nice warm cake with either cool whip, ice cream or Byrds Custard hot (its a vanilla sauce). When cake is done and still warm, pour sauce over cake.
Cream the white sugar, butter, eggs and vanilla extract with a mixer. While the cake is baking, prepare the frosting. Add all ingredients but the Brown Sugar in a large mixing bowl and mix to combine.
My mother always made this cake with fruit cocktail - I prefer pineapple chunks or canned crushed pineapple (with juice).
Sprinkle brown sugar and pecans on top.
Add fruit cocktail and stir some more. Put the batter into a greased spring form pan. In a large mixing bowl, stir together all cake ingredients until well combined.
