Chocolate Pies With Meringue. Pour egg/milk mixture into saucepan with remaining milk mixture. Spread evenly over hot filling, sealing meringue to crust.
To make the meringue, add egg whites, sugar and cream of tartar and beat all three ingredients together until still and able to form peaks.
Add the butter and place the saucepan over low heat, stirring constantly until the butter is completely melted.
Remove from flame and add vanilla and butter. To make the crust: In the bowl of a mixer, beat the egg whites with the salt and cream of tartar at medium speed until frothy. After mixed together- pour into a pie crust.
